It is believed that a process similar to pasteurization may have existed over years ago. Chinese conserved the wine by filling hot clay jars with fresh wine. They used to cover the jar with leaves and seal with mud in order to bury it in the cool soil.

The process of pasteurization was first developed by the Japanese in 16th Century. It wasn’t termed as pasteurization at that time but people regarded it as soy sauce. Japanese preferred boiling it in iron pot to transport it to Europe by sealing the bottles directly.
